# Radish on the Rocks > A gluten-free travel atlas for people with coeliac disease: restaurants, hotels, supermarkets, airports and activities, by continent, country and city. Curated by Aurelien, a flight attendant with coeliac disease. One clear opening sentence is enough: "I have coeliac disease. My meal must have no gluten, including from shared equipment." If you do not speak the local language, a written card with the same two sentences works. Then follow the questions below. They are based on guidance from the Celiac Disease Foundation, the National Celiac Association, Coeliac UK and Coeliac New Zealand. Soy sauce gets its own mention because regular soy sauce is made with wheat. Coeliac New Zealand advises avoiding soy sauce other than tamari. Can you tell staff you have coeliac disease, in words or with a written card? Do they confirm the dish must have no gluten at all, including from crumbs, shared oil and sauces such as regular soy sauce? Can they name a dish with no wheat, barley, rye, malt or regular soy sauce in it? Is that dish cooked with a shared fryer, grill, toaster, pasta water or a floured surface? Can they cook it separately, in clean oil or a clean pan, with clean utensils? Will they plate it with clean utensils or fresh gloves, away from bread? Yes. Order it. No. Choose something else. Yes means the kitchen has described a specific plan for this dish. Coeliac UK advises checking the order when it arrives, and not eating it if in doubt. No means choosing another venue, or something sealed and labelled gluten-free. On the site: - Bangkok: at Baan Pad Thai, ask before you assume the noodles are safe. Coeliac societies publish advice for each holiday. Halloween 1. Check each wrapper, not the brand. Beyond Celiac notes that a regular-size candy can be gluten-free while the miniature version is not. 2. Use a current list. The Celiac Disease Foundation updates its Halloween candy list every year. 3. Read the label in each country. Recipes can differ between countries, and so do labels. In the EU and UK, gluten cereals are emphasised in the ingredients. In Brazil, packs say "contém glúten" or "não contém glúten". In Australia and New Zealand, look for the bold "Contains" line. 4. Keep a swap bag of candy you know is gluten-free. Lunar New Year 5. Choose the noodle. Coeliac New Zealand notes that egg and ramen noodles contain wheat, and rice noodles are an alternative. 6. Know the sauces and sides. Coeliac New Zealand lists hoisin sauce, oyster sauce, soy sauce other than tamari, wonton wrappers and fortune cookies as items to avoid. Prawn crackers are likely to be gluten-free only if they come from a dedicated fryer. 7. Glutinous rice is gluten-free. Beyond Celiac explains that "glutinous" refers to the stickiness, not gluten. Fillings, sauces and coatings still need checking. Holiday meals 8. Swap the usual suspects. A Coeliac UK guest post suggests gravy thickened with cornflour, stuffing with gluten-free breadcrumbs, and gluten-free sausages. 9. Keep the prep separate. Coeliac UK advises cleaning surfaces with hot soapy water, frying in clean oil, and using separate spreads and a toaster bag. Christmas bakes 10. Know the traditional recipes. Kerststol, speculaas and pepernoten in the Netherlands, mince pies in the UK, and panettone in Italy are usually made with wheat flour. Gluten-free versions exist. Choose ones that are sealed and labelled. On the site: - Tokyo: I'm donut? Gluten-free is the gluten-free shop in Jingumae. That makes ordering easier, but it is never a guarantee. Recipes vary between kitchens, so tell staff you are coeliac and ask about each dish. 1. Indian. Coeliac UK notes that poppadoms are usually made with rice and lentil flour, and that curry sauces are mostly thickened with chickpea flour or yoghurt. Ask about: naan and other breads. Hing (asafoetida) is often processed with wheat. Ask about shared fryers, and about tandoor ovens also used for bread. 2. Mexican. Corn tortillas, corn chips, plain beans, salsa and grilled meat are the usual gluten-free base. Ask about: flour tortillas, and tortillas or chips that are not 100% corn. Beans or sauces may be thickened with flour, and chips may be fried in a shared fryer. 3. Thai. Rice, rice noodles and coconut-milk curries are common starting points. Ask about: soy sauce and oyster sauce. Some fish sauces contain wheat, and curries may be thickened with flour. Ask whether the wok is shared. 4. Japanese. Steamed rice, sashimi and rice-based dishes are the staples. Ask about: regular soy sauce (shoyu), which contains wheat. Ask for tamari or a gluten-free soy sauce instead. Barley miso, udon, ramen and tempura all contain gluten. Soba can be blended with wheat, and barley tea (mugicha) is often served with meals. 5. Ethiopian. Injera is traditionally made from teff, which is naturally gluten-free. Ask about: whether the injera is 100% teff, because some restaurants add wheat or barley flour. Kolo, a snack, is made with barley. 6. Steakhouses and grills. A plain steak, baked potato and steamed vegetables are naturally gluten-free. Ask about: marinades and seasoning blends, and au jus, which often contains wheat flour. Fries may share a fryer with breaded food, and some baked potatoes are coated in flour. Schools, food regulators and coeliac societies publish rules that help. At school 1. Ask for a written plan. Coeliac UK recommends an Individual Healthcare Plan, agreed with parents, teachers and catering staff. It should cover trips, celebrations and cookery lessons. 2. Check the meal rules where you live. In Finland, every pupil from pre-primary to upper secondary school gets a free school meal. Special diet meals follow the pupil's diet plan or medical certificate. In the US, schools in the National School Lunch Program must make reasonable meal modifications for a child whose disability restricts their diet. A medical statement is needed when the change falls outside the standard meal pattern. 3. Keep a labelled treat box. Coeliac UK advises storing gluten-free food separately, in its own containers. A named box kept with the teacher covers party days. Reading the label on shop-bought treats 4. Brazil. By law, every packaged food must say "contém glúten" or "não contém glúten". If there is a risk of cross-contamination with wheat, rye, barley or oats, the pack must say "contém glúten". 5. Australia and New Zealand. Since February 2024, allergens are printed in bold, followed by a summary statement that starts with "Contains". Wheat is named as "wheat", and "gluten" is added when gluten is present. A "gluten free" claim means no detectable gluten. 6. Canada. Gluten sources must be named by grain (barley, oats, rye, triticale or wheat) in the ingredients list or in a "Contains" statement. 7. Treat "may contain" as optional. In Canada and the US, precautionary statements are voluntary, so a pack without one is not proof there is no cross-contact. At work 8. Ask about the knife and the board. The Celiac Disease Foundation lists shared toasters, colanders and condiments as common sources of cross-contact. A cake cut with the sandwich knife counts too. 9. Brief one person once. Tell whoever orders the team food: no wheat, barley or rye, and no shared knives or boards. Buying for the whole room A box from a dedicated gluten-free bakery is safe for you and can be shared with everyone. Wherever you travel, still tell staff you are coeliac and ask how your dish is made. 1. Italy. Venues in the Italian Coeliac Association's (AIC) Alimentazione Fuori Casa network are trained by AIC and inspected at least once a year. Law 123/2005 requires school, hospital and public canteens to provide gluten-free meals on request. Diagnosed coeliacs get a monthly health-service allowance for gluten-free food, usable in pharmacies and participating shops. On the site: Freedom, a dedicated gluten-free bakery in Turin, and all of Italy. 2. Spain. Restaurants in FACE's Restauración Sin Gluten scheme train their kitchen and floor staff, are checked with random lab samples, and display a dated annual badge. They are listed in the CELIGUIA app. On the site: Naked & Sated in Bilbao, and all of Spain. 3. Ireland. The Coeliac Society of Ireland publishes an annual Food List of verified gluten-free products. It also runs Coeliac Catering Training and lists the restaurants that completed it. On the site: Dublin and Cork. 4. Argentina. National law requires restaurants, bars and fast-food outlets to offer at least one gluten-free (sin TACC) option. The option must follow a national safe-handling guide, and the deadline for restaurants and bars was June 2024. Packaged gluten-free food must contain no more than 10 mg/kg of gluten and carry the official crossed-out wheat-ear logo. In Buenos Aires City, venues that charge a cover ("cubierto") must also offer a coeliac-safe dish. On the site: La Unión, a dedicated gluten-free bakery in Palermo, and all of Buenos Aires. 5. Japan. Packaged food in Japan must declare wheat as an allergen, even in small amounts. This does not apply to restaurant food or bakery counters, so ask staff there. Japan also has an official "non-gluten" standard for rice flour (JAS 0014), set at 1 ppm or less. On the site: Gluten Free T's Kitchen and I'm donut? Gluten-free in Tokyo. These schemes and standards are published by governments and coeliac societies. Money and prescriptions 1. Canada: tax relief. The Canada Revenue Agency lets people with coeliac disease claim the extra cost of gluten-free products as a medical expense. That is the price difference compared with the regular product. You need a letter from a medical practitioner and your receipts. 2. Netherlands: a fixed tax deduction. For 2026, a gluten-free diet prescribed by a doctor or dietitian allows a fixed deduction of €900 as specific care costs. With a lactose-free diet as well, it is €1,100. 3. Scotland: food on prescription. The NHS Gluten-free Food Service gives gluten-free staple foods free of charge through community pharmacies, to people registered with a GP in Scotland. 4. New Zealand: a part-subsidy. Pharmac part-funds some gluten-free foods, such as flour, bread mix and baking mix, on prescription. Coeliac New Zealand notes that pharmacy and consultation charges vary, so it is worth comparing the cost. 5. Argentina: monthly coverage. By law, health insurers must cover diagnosis and follow-up, and pay a monthly amount towards gluten-free flours, premixes and foods. The amount is updated every six months. Trust marks 6. Crossed Grain. National coeliac societies license the AOECS trademark. Products must contain no more than 20 mg/kg of gluten, and the production site is audited every year. 7. Australia: no detectable gluten. A "gluten free" claim in Australia means no detectable gluten. The Coeliac Australia Endorsement logo is licensed for 12 months, based on lab results the manufacturer submits. 8. GFCO. The Gluten Intolerance Group's mark requires 10 ppm or less, with audited facilities and ongoing product testing. Accredited venues 9. Restaurants checked by a coeliac society. Coeliac UK accredits venues that follow its procedures. Coeliac New Zealand's Dining Out Programme trains staff, requires an independent gluten-free audit and an annual licence, and lists accredited venues in its Dining Out Guide. Big venues and coeliac societies publish information that makes planning easier. Choosing the food 1. Pick the restaurant first and share it. Coeliac UK suggests finding venues in advance and calling ahead. When the group already has the address, there is no last-minute search. 2. At Walt Disney World, choose table service. Disney says its table-service restaurants are better equipped for special diets. Many carts and kiosks have no allergy-friendly menu, but you can ask to see the packaging. Guests with four or more allergies can email the Special Diets team, no earlier than 14 days before arrival. 3. At Tokyo Disney Resort, ask for the Special Dietary Menu. It is made without five major allergens, including wheat, at selected restaurants. Guests with dietary limitations may also bring their own meals into restaurants, and some have microwaves. The tableware is not allergen-free. 4. Check the venue's own-food policy. Rules differ: Walt Disney World chefs may not prepare or reheat food brought in by guests. Drinks 5. Know what is gluten-free. Coeliac UK lists cider, wine, sherry, spirits, port and liqueurs as suitable. Beer, lager, stout and ale are not, unless they are made gluten-free. 6. Read beer labels by country. In Australia and New Zealand, a "gluten free" claim means no detectable gluten, and food made with malted gluten cereals cannot carry it. Elsewhere, gluten-free beer can contain up to 20 ppm. Events built for it 7. Look for gluten-free events. The Dutch Coeliac Association (NCV) holds gluten-free markets several times a year, mainly for members. The next one listed is in Zwaag on 20 March 2027. 8. Book activities with food included. A gluten-free cooking class or festival means the whole group eats the same food. On the site: - Vianen, Netherlands: the NCV gluten-free market. See Vianen activities. - Efteling, Kaatsheuvel: coeliac visitors report a dedicated fryer at De Eigenheymer. Coeliac societies publish the questions that turn it into a safe meal. What restaurants have to provide 1. EU. Allergen information is mandatory for non-prepacked food, including restaurant dishes. Cereals containing gluten are one of the 14 allergens. Each country decides how it is given, for example on the menu or by staff. 2. US. The FDA Food Code is a model code that states adopt. Its 2022 edition asks businesses to give written notice of major allergens in unpackaged food, for example on a menu or table tent. Wheat is one of the nine major allergens, but barley and rye are not, so ask about malt separately. 3. Australia and New Zealand. For unpackaged food at a café or takeaway, allergens must be displayed with the food or given on request, using the required names such as "wheat" and "gluten". 4. South Korea. Since July 2021, chains with 50 or more outlets that mainly sell burgers, pizza, bakery items or ice cream must show 22 allergens, including wheat. The information sits next to the menu item, on the website or app, and on a leaflet or sticker for deliveries. Before you go 5. Call at a quiet time. The National Celiac Association suggests calling outside busy hours and speaking to the chef or manager. At the table 6. Lead with the diagnosis. The Celiac Disease Foundation advises telling staff that you have coeliac disease, and asking for the chef if needed. 7. Ask specific questions. - Is there a separate fryer? - Is the gluten-free pasta cooked in fresh water? - Are sauces or gravy thickened with flour? - Is the soy sauce regular or tamari? Coeliac New Zealand advises extra care with dishes described as fried or crispy, and with soy sauce other than tamari. 8. Confirm when the plate arrives. Coeliac UK suggests checking that the dish is the gluten-free order. If in doubt, do not eat it. On the site: - Tokyo: the board outside Hokkaido Sapporo Noodle marks gluten-free options. See Tokyo restaurants. - Tokyo: Gluten Free T's Kitchen has a photo menu that marks allergens. - Cartagena, Colombia: Casona Vida is a brunch spot with gluten-free options. This checklist uses what airlines, border agencies and coeliac organisations publish. 1. Order the meal early. Delta, Singapore Airlines and Cathay Pacific all need special-meal requests at least 24 hours before departure. Singapore Airlines needs 32 or 56 hours from some cities. Delta asks you to add the request again after any booking change. 2. Check whether your flight offers one. Delta serves special meals on international flights and on most domestic routes in Delta First. KLM offers no dietary meals within Europe, and British Airways offers none in Euro Traveller (short-haul economy). 3. Know what the meal covers. Singapore Airlines' Gluten Intolerant Meal (GFML) contains no wheat, rye, barley or bran, but the airline cannot guarantee it is free of traces. Delta says it cannot guarantee its meal is 100% gluten-free. British Airways says its meal may contain up to 20 ppm. 4. Pack sealed snacks. Coeliac UK advises carrying snacks in case of delays. At US checkpoints, the TSA allows solid food in carry-on bags. Liquids and gels over 3.4 oz (100 ml) go in checked luggage. 5. Declare food at the border. All food must be declared when entering the US. Declared items that are not allowed are taken without a penalty. The Coeliac Society of Ireland suggests shop-bought packaged food, which is easier at customs. 6. Read the label for the local standard. "Gluten-free" means less than 20 ppm in the US and no more than 20 mg/kg in the EU. In Argentina, the limit is 10 mg/kg. 7. Know the rules in Argentina. By national law, airlines that serve food on board, and food kiosks in transport terminals, must offer at least one gluten-free (sin TACC) option. 8. Carry a translated card. The Coeliac Society of Ireland offers eating-out cards in all major languages. On the site: - Amsterdam Schiphol: the menu board at Leon lists gluten-free chicken nuggets. It is not a dedicated kitchen. See Amsterdam airports. - San José, Costa Rica: Mimo at Juan Santamaría Airport serves pizza. Ask whether a gluten-free base is available. See San José airports. Leon, Schiphol Plaza, Amsterdam. The menu board says "GFC – Gluten-free chicken nuggets".
